That is not a setting somebody can switch off.
Every call opens by telling the caller they are speaking with a virtual assistant and that the call is transcribed. Those sentences are assembled when the line speaks rather than typed into a field, so they cannot be edited out of a greeting: write your own wording and anything you left out is added to it. Ask it what it is at any point in the call and it says so again.
